INGREDIENTS For 4 persons
1. Boil 300g macaroni crisp, pour over with cold water and let it cool down. Prepare a dressing of 4 tbs olive oil, 1 1/2 tbs vinegar, 1 crushed clove garlic. Cut 2 zucchinis in cubes and boil them in 1 minute. Divide 1 cup of cherry tomatoes in halves, grate 4-5 carrots, and boil 100g green beans.
2. Mix it all with 1/2 can of large white beans (drained and rinsed) and 200g salami (cut in small cubes), the dressing and the macaroni. Leave it for app. 60 minutes.
3. Mix it with fresh basil leaves, mozzarella cut in cubes (1 ball of 125g) and freshly grinded pepper just before serving.
